Yummy Mango and Brie Appetizer

 

This mango and Brie appetizer is one of my favorites. It's an easy appetizer that's got a great meld of flavor as well as a deliciously creamy texture. Eating mango and brie together just wants to make you eat and eat and eat!

Try it the next time you have party to go to or want to do something different from the same tired old appetizers. It's definitely a crowd pleaser!

What you'll need:
- 1 ripe mango
- 32 tortilla chips (preferably round ones)
- 8 ounces Brie cheese
- Fresh parsley leaves

Using a cutting board, hold the mango with one of the narrow sides facing up. Slice along each side of the pit, starting about 1/4 inch from the stem. This enables you to cut off the "cheeks."

Next, with a knife or spoon, carve out the flesh from the cheeks in a single piece. You need to cut as close to the skin as possible. Then, slice each cheek into 8 thin slices and cut the slices in halves to make 32 pieces.

Next, arrange the tortilla chips on a microwave-safe serving platter. Cut the Brie cheese into 32 pieces and place one piece of Brie on each chip. You may have to use more than one microwavable plate. It's also a good thing to keep in mind to make more than you think you need. Especially with this easy appetizer.

Then, microwave each plate on high power until the Brie cheese begins to melt (about 10 to 30 seconds depending on the power of your microwave). Next, top each chip with a piece of mango and a parsley leaf. Serve it up immediately. Enjoy this delicious Mango and Brie Appetizer!
